1 1/2 cups cooked, mashed sweet potatoes
1 cup buttermilk
6 tablespoons butter, melted
2 tablespoons sugar
1/8 teaspoon baking soda
3 1/3 cups self-rising flour, divided

How to Make It
Preheat oven to 400°. Stir first 3 ingredients together in a large bowl. Add sugar, baking soda, and 3 cups flour, stirring just until dry ingredients are moistened.
Turn dough out onto a lightly floured surface; knead 8 to 10 times, adding up to 1/3 cup more flour to prevent dough from sticking. Roll dough to 3/4 inch thick; cut with a 2-inch round cutter. Place biscuits on a lightly greased (with cooking spray) baking sheet.
Bake at 400° for 15 to 20 minutes or until golden brown.
